The Courses

  • Delve into the captivating field of "Taste and Flavor" where science meets the culinary arts. This comprehensive course equips you with an unparalleled understanding of what shapes every diner's palate and how to change taste preferences towards healthier food. Whether you are a seasoned chef or passionate about serving others, learn how to discern the type of 'eater' before you and why no two people taste the same. The course ends with foundational culinary techniques that turn healthy food into mouthwatering masterpieces. Elevate every meal and leave a lasting impression on those you are nourishing.

  • You will learn how to set up a kitchen for success on a budget so that you can teach others the same. You will also learn how to set up a teaching kitchen for various purposes (cooking skill building, diet broadening, knowledge building) in various settings - the doctor's office, a community setting, an elementary school, college or university, worksite and many others.

  • Each Food Course runs through the basics of each food – the recommendations, the varieties, the health benefits or risks, food drug interactions. It then steps into the tasty side – what taste/flavor is present on the tongue with that food, how do you maximize taste, what culinary skills are needed to meet the dietary recommendations, what to buy with a focus on flavor and a person’s palate, cultural heritage and wallet in mind; and ends with how to plan a menu.

  • Through our collaboration with The Health, Education and Training Institute (a leader in Motivational Interviewing) we created MI techniques specifically for dietary changes. You will learn and practice these skills throughout the entire course. We chose MI because we believe that each person is the expert in their own health and given the right guidance, food coaches can support them on their health journey.
